Raisin-Spice Spread

Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons cooking oil
  • 1 cup raisins
  • 1 cup dry red wine
  • 1/2 cup snipped, oil-packed dried tomatoes, drained
  • 1/4 teaspoon ground cloves


Directions

  1. In a large skillet cook onion in hot oil over medium heat until tender. Add raisins, wine, drained tomatoes, and cloves. Bring to boiling; reduce heat. Simmer, uncovered, until liquid is reduced to about 2 tablespoons and raisins are soft.
  2. Transfer mixture to a food processor bowl and process until coarsely chopped. Transfer to glass storage container. Cover and store in the refrigerator for up to 2 weeks. To serve, heat the spread or serve it chilled as a spread for bread, toast, melba rounds, bagel chips, or crackers. Makes about 1 cup spread. Makes about 1 cup spread.

TO PRESENT THIS GIFT...

Roll out two coils of clay in different colors. Place coils side by side. Wrap the coils in decorative fashion around the knife handle. Bake in a glass baking dish in the oven according to the clay manufacturers instructions. Let cool. Place shredded paper in the bottom of the terra-cotta saucer. Fill the glass bowl with Raisin-Spice Spread and place on top of the shredded paper. Place knife on top.

Embellish the terra-cotta saucer in a similar manner using decorative clay shapes such as zigzags or circles.
